Histamines are not always the issue. They can be; but histamines are just the messenger here.
Histamine troubles can be indicative of issues at the immune level, the gut, liver or adrenals, or a sign of an imbalance in your HPA axis - the hypothalamus / pituitary / adrenal axis. Or any combination thereof.
Don't shoot the messenger. Fermented foods, while high in histamines, can help address the root issue long term, when clearing histamines are a problem.
